1. Fill a mixing glass with ice. Pour in the Gin, Peach Bitters, and add the Mint leaf into the glass.

2. Using a long bar spoon, stir the ingredients and ice thoroughly to chill and mix the flavors together.

3. Once well mixed, use a strainer to pour the contents into a cocktail glass, ensuring no ice is transferred.

4. To garnish, take a fresh mint sprig and give it a gentle slap between your hands to release the aroma, then place it in the cocktail glass.

- For a more pronounced peach flavor, consider muddling a small slice of fresh peach along with the Mint before adding the Gin and Bitters.

- If you desire a slightly sweeter cocktail, add a small dash of simple syrup or agave nectar to the mix.

- To enhance the mint flavor, gently press the mint against the sides of the glass before stirring. This will release the essential oils in the mint leaf.
